DD is named in homage to Stéphane’s father, who goes by the same nickname. (He also remembers a time when it was very common to bland the dominant red varieties of the Jura into a single wine.)

DD usually comprises of Pinot Noir, Trousseau, & Poulsard in equal parts. However in 2023 there was less Poulsard, so here we have around 15%. Stéphane never de-stems his Pinot, arguing that the skin of this variety is too delicate to rupture deliberately. All varieties are macerated for 3 months, the Poulsard and Trousseau with stems, and all in large old wooden tanks. Unfined and unfiltered, with approx. 5mg/L SO2 added at bottling.
